The story
The best-known name for Ninh Hoa-style nem nuong in Nha Trang: family recipes from a 1950 Ninh Hoa food stall, brought to Nha Trang by Dang Van Quyen in 1987 and now run by his eldest son. Grilled pork sausage comes with rice paper, fresh herbs, crispy cha ram and the thick house dipping sauce of fermented fish sauce (mam nem), tomato, pork, sticky rice and ground shrimp. The dining rooms are spacious and orderly, suited to groups and families.

The recipes trace to a Ninh Hoa food stall from 1950. Dang Van Quyen opened in Nha Trang in 1987 at 15 Le Loi and moved to 16A Lan Ong in 1990. His eldest son, Dang Quang Quan, now runs it. In 2007 it made an 11 m nem at the Nha Trang Sea Festival.
