The story
At dawn on the Can Tho River, small boats loaded with pots and bowls weave through Cai Rang floating market, selling hu tieu and bun rieu cua to anyone who waves them over. Some vendors have worked the market for decades: one hu tieu seller interviewed in 2025 had been at it for 40 years, rising at 2am to cook her broth before rowing out. Much of the charm is the setting, eating a hot bowl on a rocking boat while the market trades around you.
The experience here is eating breakfast on the river, more than just visiting the market. Trading starts very early, so the useful window is roughly 04:30–07:30.
What to order
Hu tieu noodle soup
The classic floating-market breakfast, made with bone broth that vendors simmer for hours before dawn.
Crab noodle soup
The other boat staple, with the sweetness of crab and the sharp taste of shrimp paste.
Coffee
Sold on the river with other drinks like sugarcane juice and fresh coconut water.
Local tips
You don't need to go looking: sit in your boat and wave over any passing food boat to order.
Vendors pack up around 8–9am, so eat early rather than after touring the market.
Buy fresh fruit and local snacks from the boats, or souvenirs.
Combine the trip with the Sau Hoai hu tieu noodle workshop, about 2 km from the market and 5–10 minutes away by boat.

Getting there
Most boats leave from Ninh Kieu Wharf in central Can Tho, about 20–40 minutes by boat to the market. Cai Rang Wharf is closer to the market but less well known. In 2025 a private boat cost about 300,000–500,000₫ (10–12 people) and a shared boat about 30,000–50,000₫ per person.
