The story
From about 18:00, a family bun rieu stall sets up around 30 plastic tables on Nguyen Thiep, opposite Dong Xuan Market, and serves late-night eaters until the small hours. The broth is simmered from pork bones and crab paste, and you choose from toppings such as cartilage, pig ear, beef, snails and mantis shrimp. It sells about 700 bowls a night, and up to about 1,000 on peak winter nights. The name 'Ba Diec' ('deaf lady') is a nickname regulars gave the owner after her hearing faded and she mixed up orders.

Choose your toppings when you order. A basic bowl is 20,000₫, and adding beef and crab takes it to 60,000₫.

On Nguyen Thiep, opposite Dong Xuan Market at the north end of the Old Quarter. Reports put the stall around nos. 68–74 or no. 89 near Hang Khoai; look for the crowd of plastic stools.
