The story
Cold-water fish farming is a real industry around Sa Pa, where water from upstream springs is kept cold, and Thac Bac (Silver Waterfall) is one of the farming areas. Restaurants in the waterfall area, such as the Thac Bac restaurant at Km 12 and Song Nhi, keep live salmon and sturgeon in ponds: you pick a fish, priced by the kg, and it is cooked as salad, hotpot or charcoal-grilled.
Trout and sturgeon have become signature ingredients of modern Sa Pa. Ask which farm the fish comes from.
