The story
Trang Kim is a short, roughly 100 m roadside stretch on the Quan Ba–Dong Van road, lined with 'Pho ga Trang Kim' signs. The rice for the noodles is ground without additives, spread by hand onto cloth stretched over steaming water, rolled off and hung on bamboo racks to dry, which is why it's called 'wind-dried' pho. The sheets are cut to order and served in a broth of pork and chicken bones with ginger, turmeric, cardamom, cinnamon and star anise, topped with free-range hill chicken.
Trang Kim is known for handmade highland pho.
Only a few families still keep up the fully handmade method.

Mornings. It's a traditional breakfast dish, and on weekends stalls sell 200–300 bowls a morning.
Getting there
On the road from Quan Ba toward Dong Van, about 10 minutes from Nam Dam. Look for the row of 'Pho ga Trang Kim' signboards on both sides of the main road.
