The story
A seasonal street stall under a bodhi tree at the foot of Gia Hoi Bridge on Chi Lang, a few dozen meters from Dong Ba market, that has sold bun giam nuoc for more than 20 years. Nuốc is a small jellyfish-like creature (about half a lime in size) from Hue's brackish lagoons, kept crisp in iced salt water. It's served over noodles with shrimp, crispy ram rolls, herbs and a thick sour sauce of fermented bamboo shoots and shrimp paste.
Serves bun giam nuoc from a family recipe, with jellyfish, ram rolls and shrimp. It is a rare, seasonal dish and the stall only sells in the afternoon.
