The story
Hoa Ma has served banh mi chao (a hot skillet of eggs and cold cuts eaten with bread) since 1958, and moved to 53 Cao Thang in 1960. The mixed skillet comes with fried eggs, pate, cha lua, sausage and cold cuts. The shop says it avoids industrial ingredients and makes everything in-house. Seating is simple, with a roofed side-alley area, and it is crowded throughout its short morning hours.
