The story
In Dong Van, banh cuon is a breakfast dish eaten with a bowl of hot bone broth instead of fish sauce. The broth is made from local black-pig bones, simmered for hours and served with pork roll, scallions and coriander. For the egg version, eggs are spread over the rice sheet while it steams. Locals say the broth keeps you warm on cold mountain mornings.
